Real Mexican Pico recipe & taco salad kinda

First you have to make the Pico de gallo.

1. Chop-
4 Tomatoes
1/2 an onion
2 jalapeƱos
Cilantro

2. This is the big secret to delicious Pico. Smash the bejesus out of the veggies. The best think to use is your hand lol but you can use a potato smasher.

3. Add lime juice and smash it some more

4. Add kosher salt for a little flavor.

Pico is my go-to!! Taste great with chicken, fish, egg whites...everything!! Lots of flavor and its all veggies. Woot woot.


Now salad time

I grill my chicken on a George Forman grill with a little but of mrs dash

1. Green stuff!! I use pre washed precut mixed greens and mix that half and half with baby spinach.

2. I add about half a small avocado chopped up

3. You can use cheese if you want but i just add a few little bits of whipped cream cheese. It's about 60 cal a serving and I don't even use that much :)

4. I put fresh cilantro on top. I love cilantro lol

5. Few spoon fulls of Pico on top. No need for salad dressing the lime juice from the Pico will flavor your entire salad!!

6. Chicken on top & your done!

You can add a few crumble up to tortilla chips to it if you wanna mix it up a little
